Not everyone can boast of Shoulders with double Montanera.
Some of our pigs reach twice the age of the rest of 100% Iberian pigs, which is why they spend twice the time in Montanera, 2 Montaneras, twice as many acorns as a normal ham.. Can you imagine a 200% Acorn ham? Well, we have it for you.
For just a little more, be amazed by double the quality.
The 100% Iberian acorn shoulder always has an outer layer of fat (yellow fat) higher than the rest of Iberian shoulders. Thanks to this layer, the shoulder can withstand all the necessary months for proper curing.
The total yield of the shoulder can vary between 28% and 33%.
This means that not all pieces are the same and that it can vary up to 400 grams of meat up or down in a 5kg shoulder and that normally around 1.4kg of meat remains in a 4.5-5 kg shoulder once we have removed the bone and outer fat.
Usually the larger the shoulder, the higher % of meat it will have.
