"Mesopotamia 2018: Full of wild fruit. A powerful, yet balanced and slightly sweet-toothed Toro wine ", according to Carlos Delgado. In his article in El Viajero in the newspaper El PAÍS, which scores us 9/10, and makes a great assessment of our project.
Mesopotamia Roble is a Toro wine made from the Terroir, and which comes from traditional vines between 40 and 50 years old. All the vineyards that we have used for the elaboration of this wine are traditional goblet-trained plantations. They have a yield of about 4,000 kg per hectare and have been harvested by hand.
Mesopotamia 2018 is a red wine that reveals the natural characteristics of the Tinta de Toro variety. It gives maximum importance to nature, the protagonism to the variety, fruit and expressiveness, without excesses of barrel.
Mesopotamia Roble has undergone malolactic fermentation in 300-liter barrels, in which it has aged 5 months to provide stability, oxygenation and maturity. Half of them are new barrels and the other barrels of two and three Toro wines, always used by Abadía de Aribayos.
Mesopotamia Roble 2018 is a Toro wine young oak type with balance, volume, roundness, body and freshness; ELEGANT.
Bearing in mind its caracteisticas, cured sheep cheeses are the perfect pairing for this wine from Toro. Highlighting those made by Vicente Pastor cheese in his traditional cheese factory in Morales del Vino, Queso Zamorano. It also makes very good pairing with any type of meat, highlighting red meats, as could be veal from Aliste.
