Washed process coffee with flavors of black currant, apple tart, and milk chocolate. Very balanced medium-high acidity and a clean and silky floral and chocolate aftertaste.
Derived from Amharic, Biftu Gudina means "ray of development". The cooperative was established in 2012 and is located in the Agaro - Goma woreda (district) within the Jimma zone. There are about 150 small farmers in total. Located near the city of Jimma, the cooperative benefits from high altitude and rich fertile soils. The surroundings are green and lush.
Biftu Gudina coffee is processed using the washed method. At the washing station, cherries are hand-picked to remove immature and overripe fruits before entering the hopper that feeds the eco-friendly Penagos pulper. Then, the beans are soaked in clean water in concrete tanks for 8 hours. Wastewater treatment is based on a natural form of filtration through a vetiver grass plot before it goes into wells and finally the ground. The beans are then sun-dried for 10 to 14 days on raised African drying beds and carefully hand-sorted.
Biftu Gudina has strong leadership and a president who, along with Technoserve (an NGO supporting farmers in establishing washing stations and new cooperative structures), established the cooperative. The initial funding came from Falcon Coffees. Since its establishment, Biftu Gudina has gained fame in specialty coffee circles for its incredibly complex and exquisite flavor, and as a result, it now achieves prices that farmers could only dream of in the past: up to four times more.
It is always one of the most anticipated coffees of the season. A classic from Ethiopia.
