Extracted directly from the Picual variety, this oil ferments a condensation of bitterness on the palate that mixes with a touch that stings as it is an olive harvested early in the campaign. In its variety of herbaceous aromas, it maintains a scent of olive leaf, grass, fig tree, tomato, and tomato plant. It is an oil with strong body, with a characteristic high content of oleic acid (monounsaturated) along with low content of polyunsaturated acid, making this olive oil very stable in oxidation and avoiding rancidity over time.
This Extra Virgin Olive Oil has Protected Designation of Origin (PDO) as it has been exclusively harvested in the area of the Eastern Montes de Granada, over 1500 meters above sea level, achieving that characteristic flavor that produces bitterness and pungency on the palate.
