Utilizing his deep knowledge of wine and his expert taste buds, Simon Violet created a unique recipe from a blend of fine Roussillon wines, aromatized with plant extracts and improved with Quinquina. The resulting aperitif was sold under the name of "tonic hygienic wine with Quinquina"; Medicinal wines with Quinquina that had fortifying qualities and whose deliveries to pharmacies, stores and cafes in the area supervised Simon himself.
On 10 February 1873, before the Secretary of the Perpignan trade Tribunal, the Byrrh trademark was registered; A name that has always aroused interest and curiosity.
There are several versions of how this strangely spelled word came to exist. According to one of these stories, the name BYRRH is a completely random invention: The letters B R R H were simply letters attached to a few rolls of cloth stored in the haberdashery of the Violet brothers.
