Carrasviñas is a golden wine produced by Bodegas Félix Lorenzo Cachazo with Palomino and Verdejo grapes under the Rueda DO.
The grapes are harvested when they have reached a high alcohol content. In the winery the grapes are vinified separately, destemmed and crushed with a gentle pressing to extract the free-run juice. This must is fermented in stainless steel tanks. As soon as the alcoholic fermentation is complete, the thick lees are removed and the coupage of the two types of wine is carried out.
Afterwards, and following the same winemaking process as their ancestors, the wine is temporarily bottled in 16-litre demijohns and remains in the open air for around 18 months. During this time it undergoes an "oxidative ageing" which gives the wine a golden colour. The wine is aged in oak barrels where it will remain for at least 2 years before bottling.
Visual phase: it has a golden colour, clean and bright.
Olfactory phase: denotes its high alcohol content and its oxidative ageing, as well as sensations provided by the oak used in its production. Aromatic nuances of dried fruits and toasted backgrounds appear.
Tasting phase: It is glyceric with a wide range of dried fruit flavours, toasted background, with an important complexity contributed by its long oxidation in wood. It is long, oily and spicy.

This must is fermented in stainless steel tanks. As soon as the alcoholic fermentation is complete, the thick lees are removed and the coupage of the two types of wine is made.
