Cecina de Vaca from the Province of León (Carrizo de la Ribera) Cecina is a cured meat or salted meat (it is not a sausage, as this type of processed meat is produced inside a casing) whose production method has many points in common with that of cured ham, so much so that it is often colloquially called cow's ham.
In the case of cecina, the curing process is carried out on beef (the most common and the most gastronomically valued).
