Cornicabra olive oil is extracted from olives of the Cornicabra olive variety. It is the most characteristic olive oil of Castilla la Mancha where it is recognized by the PDO Montes de Toledo
Among the organoleptic characteristics of Cornicabra EVOO, the aromas of green leaves, tomato and almond stand out. In more mature oils, it is possible to enjoy the presence of exotic fruits and avocado. Its flavor is of medium bitterness and spiciness, with a certain sweetness when harvested late
In terms of health, it should be noted that Cornicabra oil, together with Picual olive oil, is one of the oils with the highest content of Oleocanthal (natural anticarcinogen)
Thanks to its high stability, Cornicabra oil withstands well the frying cycles, being suitable for this purpose. It is also very suitable to enhance the flavor of roasted meat or fish
