Llopart Ex·Vite is considered the emblem of the long aging process of Llopart. It combines the history and legacy of Llopart and is named after the family motto Ex Vite Vita (life comes from the vine).
Winery: Own vineyards, at Bodega Llopart, Subirats (Barcelona) D.O. Corpinnat Vintage: 2013 (96 months of aging) Alcohol content: 12%
Variety: 60% Xarel.lo and 40% Macabeu
Serving temperature: 8-10ºC
Tasting notes: Golden color, bright and penetrating, it shows us a small, fine and integrated bubble, which, thanks to its long aging, becomes an emotional caress on the palate. Powerful, elegant and complex aroma that mixes memories of nuts, toasted, balsamic and subtle smoky notes. In the mouth, it is wide and very tasty, with light hints of baked fruit, structured and very creamy. Its memory is persistent and pleasant, prolonged like the time that its bottle guards.
Elaboration: Llopart produces all its sparkling wines with the traditional champennoise method, seeking excellence in all its products based on the maximum quality of the raw material, the grape. The Les Flandes vineyard places us in a haven formed by an amphitheater of vines, elevated on limestone rock walls over 12 meters high, from the Miocene era (16 million years) and over 60 years old. In this place, unique, privileged characteristics are given, perfect for the production of grapes with the greatest expression of singularity. Les Flandes is an enclave located 380 meters above sea level, surrounded by a vast lung of Mediterranean pine and oak forest with great biodiversity, where countless aromatic plants predominate. This is why we talk about Llopart's mountain vines. "Coupage" with reserve wines aged in oak barrels. Champenoise liqueur made according to a genuine oenological formula from the late 19th century. Limited production of 5,300 bottles annually.
Pairing: At Made in Spain Gourmet we recommend it with Sushi, Iberian cold cuts, and light appetizers.
The vineyard is located in Les Flandes, which places us in a haven formed by an amphitheater of vines, elevated on vertical limestone rock walls over 12 meters high. Les Flandes is an enclave surrounded by a vast lung of Mediterranean pine and oak forest.
Les Flandes is a space formed by a large amphitheater of vines, elevated on a large vertical wall of limestone rock, over 12 meters high. Due to rainwater seepage, spectacular landslides have occurred on the rock wall, allowing access to and examining, in an absolutely exceptional way, the subsoil of the vines located on its surface.
The soil is moderately deep, basic pH and highly evolved. It has a medium to fine texture and a good mineral balance, with the accumulation of carbonates in the middle layers. The level of organic matter is low. Up to 65cm deep, there are numerous cavities and galleries due to the high activity of native fauna. The slope of the land in terraces prevents the accumulation of rainwater, forcing the vine to develop vertical roots, seeking moisture and taking advantage of the cracks it finds in the limestone rock. This fact allows the vines to maintain stable production and quality, even in years of extreme drought.
The vines extend in a north orientation, shady, and receive filtered sunlight. The altitude relative to the surrounding lands and the easy entry of cooler air from the north give rise, during the hottest times, to a high nocturnal thermal contrast, a factor that favors slow grape ripening. These special conditions give us an optimal aromatic expression, complete phenolic development, and the attainment of good sugar levels, while maintaining the necessary high acidity for the long bottle aging the wines will undergo. The Lebeche wind, a southwest wind from the coast of Baix Penedès, reaches us in the summer afternoons as a sea breeze laden with humidity. This humid air brings two benefits to the vineyard: on one hand, it provides water on the driest and hottest days due to nighttime condensation
