Perfeccionista is a white wine made from 100% Godello grapes in the D.O. Rías Baixas by Bodega Davide.
100% Godello, exclusively from Finca Ofelia in Baión. This micro-plot has an optimal orientation that ensures an exceptional ripening of Godello in the Salnés Valley. The vines grow in poor, granitic soils with excellent drainage capacity, conditions that favour the concentration of aromas and the structure of the wine. We practice a reflexive viticulture, deeply understanding each process and respecting the environment and the natural cycle of the vineyard.
The grapes are carefully selected and harvested by hand, preserving the integrity of the whole bunch. Manual pressing is limited to the free-run juice, followed by spontaneous fermentation in barrels with indigenous yeasts. The wine matures for 6 months in French oak barrels, with daily battonnage of the lees to add complexity and texture. It is then aged for two months in the bottle before release.
Appearance: Straw yellow colour with greenish reflections, bright and attractive.
Nose: Complex and evocative, offering aromas of ripe fruit such as apple and apricot, citrus touches of grapefruit peel, and an elegant fusion of floral and woody notes such as sandalwood and incense.
Palate: Smooth and balanced entry, combining freshness with a seductive creaminess. Intense and savoury, the palate is enriched with notes of almond, vanilla, and fennel, with a hint of aniseed. As the wine warms up, iodine and saline nuances emerge, broadening the sensory experience.
Finish: Persistent and enveloping, the aftertaste is a true reflection of the rich aromatic palette, with a lingering finish that invites further enjoyment.
Evolution in Bottle: "Perfectionist" shows excellent cellaring potential, reaching higher levels of elegance and depth over time.
