Varieties and elaboration: 55% Chardonnay 45% Pinot Noir Dom Pérignon was the first prestigious cuveé, its first harvest was in 1921. It is a vintage champagne, which means it is only made in the best years, and all the grapes used for the wine production have been harvested in that same year. Around 25 million bottles are produced in each harvest. Its current winemaker is Richard Geoffroy, Head of the Dom Perignon Cellar since 1998. Tasting notes: Sight: Golden with greenish reflections. Nose: The first nose, fresh, crystalline and firm, reveals an original universe, vegetable, aquatic, where white pepper and gardenia blend. The maturity of the wine is then offered smoothly and lightly before we can feel its peat inflections. Palate: The attack comes out direct, prelude to an amplitude that becomes lascivious and seems to entwine like a vine. Aniseed and dry ginger notes glide over the skin of a fruit (pear and mango) that is more tactile than fleshy. The finish stretches and calms down, calm, mature, diffused, as there is no other Dom Perignon than the Dom Perignon Vintage. Dom Perignon Vintage 2000 has aged in the cellar for seven years to reach its most accomplished expression. Pairing and Serving Temperature: Serve at 8 ºC. Especially recommended to pair with risottos, white meats, fruit desserts, tempura, acorn-fed Iberian ham.
