Vineyards of 60 years old growing on terraces and slopes with gravel and ferric slate soils,these characteristics, naturally produce a load per hectare of 4000 kg.
The fruit from these vineyards has a very favorable skin to pulp ratio (very thick pulp and low water content in the pulp) for obtaining high quality wines. For the elaboration of this wine, the best fruit was selected at a point of ripeness that will offer us a good phenolic concentration without losing a lively acidity, which, in turn, will provide a great freshness to the final wine.
The harvest of these vineyards begins around September 15 and after a selection in the vineyard itself, the grapes arrive at the winery in 15 kg boxes. There, it is again manually sorted on the sorting table.
A total destemming is performed and we begin a three-week maceration where by pumping over we extract all the aromatic and flavor potential possible. Finally it is deposited in French oak barrels (Allier and Nevers) and American (Missouri and Virginia), from 1 to 2 years of use, where it will undergo malolactic fermentation and aging for 9 months.
