The history of whiskey begins on October 5, 1740, the birth date of John Jameson in a renowned family with the motto "Sine Metu" (without fear) for their valor in battles at sea against pirates during the 16th century.
The secret to Jameson's smoothness is time. It is produced with highly pure water combined with malted and unmalted barley, distilled 3 times in traditional copper stills, and aged in oak barrels, guaranteeing its smooth taste and absolute purity.
After distillation, the strength of the 2 types of spirits is reduced to between 60-70% alcohol by volume with pure water and introduced into the barrels. Three different types of barrels are used: sherry casks, bourbon barrels, and port pipes (after all, three is their lucky number), all maintained by the cooper. The barrels are stored in their enormous, dark, and aromatic warehouse in Midleton, where they rest and mature for the following years. In one year, each barrel loses approximately 2% of its volume through evaporation. This is known as "the angels' share."
The mature whiskeys are emptied into huge vats where they can marry before being bottled. Here, the alcohol strength is also reduced to 40% alcohol by volume, and the whiskey is ready for enjoyment.
