Don Zoilo Pedro Ximenez

Don Zoilo Pedro Ximenez is a sherry wine produced by Williams & Humbert with the Pedro Ximenez variety.

Grapes raisined in the sun for 15 days in the almijares, musts at high pressures in special presses, immediate fortification at 9º, decanting and deslío after the first cold, new fortification until reaching 18º and then passing to the Criaderas and Solera system for ageing of the physical-chemical type by oxidation for a minimum of 15 years.

Black mahogany coloured wine. Characteristic aromas of the Pedro Ximenez grape, sultanas, figs. Not very acidic on the palate, very sweet and persistent.
