The Espelette chilli pepper is the only spice in France to be a Protected Designation of Origin (PAOP). Now recognized worldwide for its taste qualities, this fruity red pepper is grown from February and harvested from August to December in the Basque Country. It is used in seasoning dishes and other culinary preparations emblematic of the Basque gastronomy.
