On very specific days, at the beginning of the harvest season, during the month of October, it is made from green fruits to achieve its unique attributes. At least 20 kg of olives are needed to obtain 1 liter of product, since in the green state the olive has not yet formed its oil. So you can imagine how exclusive this oil is.
