TASTING This oil from the Los Cerros de Úbeda area, made from the picual variety, has a smooth flavor with certain bitter and spicy notes. It is one of the most stable varieties with a higher proportion of oleic acid known, giving it nobility and flavor. Its stability makes it very resistant to becoming rancid.
PAIRING The color and flavor of this EVOO is achieved by keeping it away from light for as long as possible before consumption. Through this technique, we better preserve its properties. This would not happen with long distribution channels and premature packaging of the product. Recommended for daily use in our kitchen for dressings, frying, preserving, or confiting. Ideal for cooking and preparations where the flavor of the oil stands out. Its yield is much higher than other vegetable fats, whether cold or hot, as less quantity is needed due to its intense aroma when raw and it increases in volume when heated, better retaining its dietary properties than other fats.
