Our organic rye flour is made with a variety of rye called gigantón. It is one of the varieties recovered by us and that is used for the manufacture of bread.
This variety is not very productive in its cultivation but its flavor is the one of yesteryear. In this case the extraction is 80% being very grateful for its baking
