The Comté has a great aromatic richness, due to the conditions of maturation to which they are subjected and to the nature of the rich variety of flora of its place of origin. Like all great cheeses, Comté enjoys a great and varied flavour depending on its producer. Floral aromas and fruity flavors can be found in summer and nutty in winter. Although it is also known as the Gruyer de Conté, its Swiss brother is somewhat spicier.
