The traditional process involves manually pressing the cheese with a knotted cloth, giving it its characteristic shape. It then matures in the cellar for about 45 days, to achieve the texture and flavor that will make you fall in love at first sight.
Being "as crazy as a goat" in this case would actually be heavenly. Our herd grazes in a unique terrain, giving our cheese an unmistakable flavor. The goats graze freely, to the tune of "Libre" by Nino Bravo, at the foot of the Sierra de la Sagra. This is essential to obtaining unique and high-quality milk.
