The harvest takes place in September, during the night, taking advantage of the cool temperatures to preserve the intense aromas of the Verdejo grape. After a brief cold maceration, controlled fermentation at low temperatures begins, lasting 18 days, ensuring maximum quality and aromatic expression in each bottle.
