Of characteristic flavor, broad and intense but well balanced this authentic artisan shepherd cheese with PDO Idiazabal, has been made with raw milk from lacha sheep matured for a minimum of two months, fruit of the is the result of the effort of a family that strives to maintain the traditions and develop a cheese as it has always been done, that is, taking care of their own livestock, producing and curing the cheese, but above all, taking into account their true objective, that of creating a unique and unforgettable experience, which they achieve when we try a bite of their cheeses.
Made with raw lacha sheep's milk from our own livestock and matured in dryers for fifteen days and then in a chamber for at least two months. It stands out for its consistent, slightly spicy, clean taste, with a marked character of "matured sheep's milk" and some taste of natural rennet.
