Cash-pressed cow's cheese, refined with natural washed rind, made with raw cow's milk. Intense and persistent flavor. At first you perceive a very elegant acidity and sweet notes of cream and exquisite raw butter. Dairy and herbaceous aromas predominate (hay, straw) very well combined with subtle animal and fermentation aromas. The aftertaste is very pleasant with hints of dried hazelnuts and accompanied by persistent notes of butter. The rind is perfectly edible and reinforces the final taste with fungal notes, slightly bitter and spicy (pepper).
