Vins El Cep is born from the union of four families of winemakers and four estates. Producers since 1980 of unique high-quality wines and cavas, expressing their terroirs. Located in els Costers de l'Anoia, in Can Llopart de les Alzines, they are pioneers in organic and biodynamic viticulture. Penedés Degree: 12% Variety: 85% Pinot Noir and 15% Chardonnay Tasting notes: Pale yellow color with golden reflections. Fine and persistent bubbles of slow evolution. Frank aromas, combining citrus, soft toasts, and brioche. An elegant cava with great minerality that shows itself dense and wide on the palate typical of the variety. Saline notes. Balanced and elegant, with a long finish. Service temperature: 6-8ºC Elaboration: The very warm autumn extended the energy reserve period of the vine. The rains allowed to increase the water capacity of the soil. The winter was dry and very warm, causing an advanced sprouting of the vine. Spring was warm and very dry, causing a production loss. Occasional rains during the month of July and early August helped a good grape ripening. They had a low productive and good quality harvest with high acidity for their wines. They began the harvest on August 14th with the Pinot Noir and finished on October 2nd with the Cabernet Sauvignon. Manual harvest. Cooling of the grape. Gravity feed.
