MIM Natura is a surprising ecological rosé cava. Based on a Pinot noir from a estate in the Costers de l'Anoia area and with a minimum of 18 months aging on lees, it stands out for its complex nose where red berries and violet notes stand out. In the mouth, it is crisp, dry, and very refreshing. A vintage Brut reserva rosé that would overshadow a good champagne without even trying. One of our favorites.

Tasting notes: A cava with great personality and aromatic intensity, where sweet red fruit aromas predominate over a floral background with hints of violet. On the palate, it shows great balance and density. Well-integrated bubbles, a wine of great volume, seductive and elegant.

Production: This wine comes exclusively from a Pinot Noir vineyard in our Can Prats estate in San Lorenzo, located in the privileged area of the Costers del Anoia. This 4 ha vineyard is cultivated following the principles of organic agriculture, allowing us to obtain grapes with the optimal level of ripeness while maintaining the acidity characteristic of the variety. Year of planting: 1990. Training system: trellis. Moderately deep soils, carbonated, predominantly francolli-moses textures, well-structured, porous, and with frequent fauna activity. These soils are very suitable for viticulture and allow the full expression of the varietal character of the vines. Southwest orientation. Harvest is done manually. Quick and gravity-fed entry into the winery. Very gentle pressing at low pressure without maceration, with a must extraction between 45 and 50%, representing the most elegant and subtle fraction of the must. Fermentation in small tanks at controlled temperature. Aging for over 18 months.
Pairing: seafood, fish, foie gras. Their Path
The Carreras, Esteve, Masana, and Parera families had a centuries-old experience, with a deep-rooted agricultural tradition and in the tradition of making wine in their farmhouses. Thus, in 1980 they started a joint project to make wines and cavas that represent the identity of their terroirs. Can Llopart de les Alzines, an estate dating back to 1499 surrounded by vineyards, was chosen as the location to build their winery. The soul of their project was - and always will be - those four friends and neighbors who ended up becoming partners. Gil Masana, Josep Carreras, Pere Parera, and Josep Esteve, starting from their vocation, knowledge, and love for the land, knew how to lead it to where it is now.
Biodynamic: Pioneers and Believers
Throughout their history, each generation has contributed their insight, their advancements, but also the wisdom to see and reflect. The experience gained from this direct contact with the land led them, in 2000, to steer their agriculture towards organic cultivation.
