Let's start with mustard and honey made in Périgord!

With its rich and dark forests, its sunflower fields blooming in July, the Périgord enjoys optimal conditions to produce exceptional honeys. This is why the Apisphere house is committed to offering honey only from the Périgord, a guarantee of gastronomic quality and traceability.

As for the mustard, it is made from mustard seeds grown in Périgord, in accordance with tradition.

What about our oils and flours made in our mill?

Our oil is obtained through an ancestral method of manufacture, divided into 3 stages:

First, the hazelnut kernels are crushed by our millstones. It takes about 1h30 to obtain a smooth hazelnut paste.

Then, the hazelnut kernels are crushed by our grinders

Then comes the most important step: heating. The paste is going to be slowly heated in a cast iron pan in order to reveal its aromas.

Finally, the paste is heated in a pan

Finally, the dough is wrapped in cloth, called "scourtins". Then, under a 40-ton pressure exerted by a hydraulic jack, our precious golden-colored elixir flows.

Finally, the dough is wrapped in a cloth called "scourtins"

As for our flours, they are obtained from the manufacture of oils.

At the bottom of the press after the oil is extracted, a large block of partially deoiled paste will remain. This, better known as 'cake' will be broken, crushed and then sieved.

The oil is then extracted from the press

It is after its passage through the sieve that we get our walnut, hazelnut and almond flours!
