Variety: 100% Cabernet Sauvignon
Alcohol content: 14.9% vol.
Tasting notes:
Appearance: Bright ruby red color with medium intensity.
Nose: Clean and intense with notes of fresh red fruits and a spicy, balsamic background.
Palate: It shows a sweet and round character, with soft tannins and a light structure with good volume. Fresh and long finish.
Serving temperature: serve between 12 and 14 ºC
Geology and Soil:
Deep, clayey, and loamy soil, up to 120 cm deep. Medium texture, with low organic matter content and a relatively basic pH. This type of soil filters water quickly, is rich in nutrients, and has a high water retention capacity.
Pairing:
At Made in Spain Gourmet we recommend it with meat and game stews, blue fish, aged sheep and goat cheeses, Iberian cured meats, acorn-fed ham, vegan cheeses. With premium preserves such as pickled quails from DE la Cueva Fine Food. Also with dark chocolate, on its own, of course.
Elaboration:
Selected grapes from plot 9 of the Els Cirerers vineyard. Late harvest, hand-picked and transported to the winery in small crates, where they are refrigerated for 24 hours at 10 ºC. Final control of the grapes on the selection table and destemming. Gentle pressing with low yields.
Fermentation at a controlled temperature of 22 ºC. Maceration of the grapes and bâtonnage. Aging in French oak barrels for three months to increase the complexity of the wine.
