Overworks Cosmic Strawberry&Vanilla was brewed with an original gravity of 1.055, using malted barley, malted wheat and malted oats. A variety of hops were added to the tank during the boil. After cooling, the wort was transferred to a fermentation vessel in our cellar. Our own Brettanomyces yeast strains were used.
After fermentation, we inoculated the beer with Cher Ami, our own in-house sour yeast culture. It contains malted barley, malted wheat and malted oats. The beer was then aged in an Italian foeder for twelve months. It was then refermented with strawberries and infused with vanilla.
