Pacharán La Navarra is a liqueur known from the community of Navarra since the Middle Ages, is made from the maceration in brandy of the fruit of the tree known as sloe (Prunnus Spinosa), wild and abundant in the mountain areas of Navarra, with star anise.
The sloes come from Navarre plantations controlled by the Regulatory Council of Pacharón Navarro and the alcohol comes from beet weeds; these two ingredients are macerated with aniseed and depending on how the fruit evolves with the alcohol (color and flavor) the aniseed sugar is gradually added which is the one that provides density that balances the astringent characteristic of fruit , having to filter the resulting mixture to separate impurities.
