Paquita Mut is a white wine made with Muscat of Alexandria by Les Freses de Jesús Pobre in the PDO Alicante.
100% Muscat of Alexandria (different clones, rootstocks and subvarieties) planted in goblet. Fermentation begins with yeasts from a vat foot 5 days prior to harvest and is kept at a controlled temperature of 14ºC in stainless steel tanks.
After three rackings, a very short run of 1200 bottles is bottled with a light filtration and a low level of sulphites.
Bright and with green reflections typical of Muscat. On the nose it is a muscatel full of fresh flowers, jasmine and rose. In the mouth, the age of its vines are very present, it is a complex, gastronomic wine, full and long, citric with lemongrass, and very herbal flavour.
