Pascal Cotat La Grande Côte is a dry single varietal Sauvignon Blanc white wine of organic origin. Pascal Cotat is a winemaker who is noted for producing some of the world's most distinctive wines from the Sauvignon Blanc grape. He operates from a small winery located in Chavignol, in the Sancerre region. Its vineyards sit on a chalk plateau that features a distinctive soil known as "terres blanches" in French, characterized by calcareous and clay components, similar to those present in Chablis.
Pascal Cotat La Grande Côte wine comes from an exceptional parcel that is situated on steep slopes, on calcareous soils rich in fossils and silex. For its production, Pascal Cotat chooses to harvest later than usual, pushing the ripeness of the grapes to the limit in order to achieve wines that exhibit greater texture and complexity.
Harvesting is done by hand, and although Pascal Cotat's wines are not certified organic, he follows the principles of organic and biodynamic agriculture. No pesticides are used in his vineyards.
