Extra Virgin Olive Oil Selection First Days is characterized by being an oil produced during the first days of the campaign, produced from October 1st to November 15th (Depending on each campaign, the production date may vary). This oil is always packaged unfiltered, resulting in a more intense oil.
This oil is produced cold. (Room temperature, ALWAYS below 25 ºC, no heat is added during the process).
The main difference of the first days oil compared to the Selection is that the former is produced on a specific date and the latter is not. It also differs in that its bitterness and spiciness are more intense, as they come from olives in a less advanced state of ripeness (early oils).
It is a full-bodied oil, dense in the mouth, with an aroma reminiscent of green grass or green olive branch, twig, or leaf. These smells and flavors come from the main varieties that make up this blend, which are Manzanilla de Sevilla, Picual, and Hojiblanca.
