• Collected mainly from the cantueso flower, heather, blackberry, holm oak, and oak trees of the Sierra de Madrid (Bustarviejo).

The collection process

• Uncapping: which consists of removing the caps that bees have built to seal the cells, in order to preserve the precious element. A stainless steel comb and an appropriate knife are used for this purpose.
• Honey extraction: carried out by centrifugation in a radial mechanical extractor, made of stainless steel.
• Settling and filtering. Once this process is finished, the honey is transferred to settling tanks (stainless steel drums) where it remains for several days so that all impurities (waxes from extraction) separate naturally due to density differences, at room temperature. Immediately after, the honey is filtered using steel and nylon filters, and is ready for packaging.
