The Red Wine 1270 a Vuit is a sublime example of what the DOQ Priorat region has to offer. Produced by Celler Hidalgo Albert, this wine is carefully crafted from the Garnacha and Cariñena grape varieties, two iconic strains that bring both character and depth to each bottle.
The winemaking process of this wine begins with a manual harvest in 15 kg boxes, allowing for a precise selection of the best clusters. Only the fruits that have reached their optimal ripeness are chosen, ensuring that the wine has the ideal balance between concentration and freshness. Once the grapes reach the winery, they undergo destemming and gentle pressing to preserve the quality of the must. The maceration process lasts for 20 days, giving the wine greater extraction of color, aromas, and tannins, characteristics that define its structure and complexity.
The Red Wine 1270 a Vuit is aged in barrels of French and American oak for 12 months, adding notable depth and a subtle influence of the spicy and toasty notes characteristic of the wood. This balanced aging allows the wine to develop a robust character without losing its natural elegance. After this process, before bottling, the wine undergoes a gentle filtration and sulfur stabilization to ensure its purity and longevity. Once bottled, the wine must rest in the cellar for at least 18 months, allowing its components to harmoniously integrate, achieving greater roundness on the palate.
As for the tasting, this wine stands out for its complexity and elegance, with fresh aromas evoking the forests of northern Priorat. On the palate, it offers a combination of ripe red fruits, mineral notes, and a long and persistent finish, characteristics that make it an ideal choice to accompany red meats, stews, and aged cheeses.
