Breeding
The Cueva del Chamán Roble Red Wine after undergoing malolactic fermentation, the wine is put into new 25% French oak barrels of 300 liters to carry out its aging for a minimum time of four months.
Harvesting and Winemaking
The vineyards where the Cueva del Chamán Roble Red Wine comes from are strictly selected by the winery's team where most of them are vines with many years of age, with low yields and taking care of the health of the vineyard since, focusing on these three factors, they obtain grapes with maximum quality. The grapes are harvested by carrying the bunches in 100 kg crates.
For its elaboration 100% of the grape variety Garnacha Tintoreraand which brings uniqueness to the wines, as well as structure and color. In terms of vinification, the traditional method is carried out with destemming of the grapes and fermentation is carried out in rotating horizontal tanks.
In terms of fermentation processes, the temperature is around 28ºC where the must is in contact with its skins for twelve days. Finally after barrel aging, the wine goes through an amicrobic diltration to preserve all its characteristics.
Garnacha Tintorera
Garnacha Tintorera is a late ripening variety but with good productivity and yield It is a variety with colorful flesh and skin that normally when used to blend with other red wines, is vinified separately in order to enhance color, give depth and roundness. It gives great results when blended with Monastrell and Syrah grape varieties.
This variety can be found mostly in: D.O Almansa, D.O Yecla, D.O Jumilla and D.O Valencia, D.O Valdeorras to Castilla de la Mancha and Catalonia.
