PRODUCTION
- Separate production: We produce each plot and variety separately to achieve the best points of harvest and production.
- Maceration: Destemmed grapes without crushing and 4-day cold maceration at 14oC for greater aroma extraction.
- Fermentation: 21 days at controlled temperature below 25oC.
- Post-fermentation maceration to fix color and aromas.
- Malolactic fermentation in stainless steel tanks.
- 12-hour cold skin maceration at a temperature between 4o and 6oC.
- Alcoholic fermentation with controlled temperature between 15o and 17oC
- Aging for 4 months on fine lees
