Vino de Pago by Finca Élez: Tierra de Sabinas Tinto is the result of a careful blend of the varieties Cencibel, Cabernet Sauvignon, and Merlot.

Our vineyards at high altitude surrounded by junipers and aromatic plants are expressed through this honest wine, marking its unmistakable personality.

PRODUCTION

• Separate production: We produce each plot and variety separately to achieve the best points of harvest and production.
• Maceration: Destemmed grapes without crushing and 4-day cold maceration at 14oC for greater aroma extraction.
• Fermentation: 21 days at controlled temperature below 25oC.
• Post-fermentation maceration to fix color and aromas.
• Malolactic fermentation in stainless steel tanks.
• 12-hour cold skin maceration at a temperature between 4o and 6oC.
• Alcoholic fermentation with controlled temperature between 15o and 17oC
• Aging for 4 months on fine lees
