Aging and Production
To produce this Vino Tinto Olarra Gran Reserva, a traditional production process from the seventies is carried out. It comes from old vines planted in poor, low-yielding soils. It was bottled in early 2015 without prior tartaric stabilization to preserve its structure and freshness intact.
Regarding its aging, this Red Wine undergoes a reduction of the macerations to prioritize the liveliness of the wine, achieving greater finesse and structure on the palate. It is worth noting that at the end of fermentation, it is carried out without the grape skins, subsequently undergoing malolactic fermentation and aged primarily in new barrels from Missouri and central France. The second-year aging takes place in old barrels to enhance primary aromas and fermentation aromas over those of aging itself.

The origins of this winery come from a building, a work by Juan Antonio Ridruejo in 1973, designed and conceived for wine. The most emblematic feature is its roof that crowns the barrel room, which is formed by 11 hexagonal domes that help prevent sudden temperature changes.
