Aging
This Red Wine Ondarre 7 Parcelas undergoes an aging in American and French oak barrels where it remains for 12 to 16 months with periodic rackings.
Elaboration
To make this Red Wine it is made with the grape varieties Tempranillo and Mazuelo from the diversity of the soils of Viana. These small vineyards are located at an altitude between 400 and 700 meters. The soils of these vineyards are limestone and shallow, where gypsum and limestone emerge with good drainage and depth.
At the time of harvest, healthy fruit is sought with the right maturity in order to achieve wines with aging potential. The must undergoes fermentation between 18 and 24 degrees in order to preserve the aromas of Tempranillo and Mazuelo. The maceration times last around two weeks with daily pump-overs to extract quality components and aromas.
