The Red Wine Pago de los Capellanes A Dream in the Heights is much more than a wine; it is an authentic expression of the extraordinary environment in which it is cultivated. Located in the highlands of the southern end of Ribera del Duero, this wine benefits from the freshness and special energy that only altitude can provide.
The tempranillo vines (tinto fino), between 50 and 60 years old, are scattered in a mosaic of rugged slopes and hills, characterized by reddish soils and ancient geology that gives a unique mineral identity to the wine. This rich biodiversity environment in the municipalities of Fuentenebro, Pardilla, and Honrubia de la Cuesta creates the ideal conditions for the cultivation of high-quality grapes.
The vineyard is cultivated in an environmentally friendly way, using limited tillage methods and careful manual work to control vegetation. Native species such as junipers, savins, and holm oaks are integrated to promote the vineyard's health and its integration into the surrounding ecosystem.
The production of A Dream in the Heights is done with care. After a cold pre-fermentation maceration, fermentation takes place in stainless steel tanks at controlled temperature, followed by spontaneous malolactic fermentation in French oak vats. Aging for one year in these same vats and subsequent bottling without additional clarifications or stabilizations reflect the purity and integrity of the wine.
With an alcohol content of 15% Vol., A Dream in the Heights has a bottle aging potential of up to 15 years, evolving positively over time.
