Harvesting and Winemaking
The Vino Tinto La Transición comes from 100% old vines of Grenache, with a granite soil with a loamy texture and yields of approximately 3,500 kg per hectare. For its production, 100% of the Garnacha grape variety is used and it is harvested in 25 kg boxes, where once it enters the winery it goes through its respective processes and undergoes fermentation in concrete tanks.
Vineyards
In this area of the village of Cebreros pure Garnacha and Albillo Real vines have settled and have survived the development of other more productive areas as the winemakers have focused on not losing these vines as they consider them as part of the family.
These are old vines that have stood the test of time and that Sotomanique has now endeavored to recover and restore since its purchase of these in 2016.
