Roquefort Papillon is a French blue cheese made with coagulated sheep's milk and naturally molded. The Papillon brand produces its own penicillium naturally on rye breads which are then transferred to their cheeses. The cheese has a white and intense blue paste with large veins and numerous cavities. Its texture is smooth, creamy, and melting, easily spreadable. It has an intense, powerful, and long-lasting flavor; somewhat salty and slightly spicy.
