Saint Agur is a pasteurized cow's milk cheese weighing 2.5 kg with 33% fat on the finished product. The Bleu Saint Agur is part of the blue-veined cheese family. Its paste is supple and its taste combines the strength of the blue cheese taste with the softness of a melting texture. Its rind, ochre tending to brown in places, is slightly harder but remains discreet and pleasant in the mouth. This cheese is made by the compagnie fromagère de la Vallée de l'Ance in Beauzac in the Haute-Loire department.
Blue Saint Agur can be enjoyed all year long.
It's tangy taste makes it a delicious cheese to eat on good fresh bread like country or seed bread.
In hot tasting, it always meets a great success in the form of sauce to accompany certain meats or simply in pasta with cheese sauce. It is also very popular married to potatoes or other vegetables with a neutral taste such as cauliflower or even zucchini.
Wine-wise, red wines are preferred, such as a Pays d'Oc red from overripe grapes, or a rosé wine such as a Muscat de Beaumes-de-Venise rosé AOC/AOP.
