The semi-cured Adiano D.O. Manchego cheese (whole) is an artisan cheese with medium cure, which has the designation of origin and is made in an artisanal way in the pastures of the El Campillo estate (Ciudad Real) at the foot of the Toledo mountains. Adiano semi-cured cheese is made from freshly milked raw milk, unpasteurized, from purebred Manchego sheep fed on the farm. It has no additives or preservatives. Aged in its own mold, which gives Adiano a unique flavor, and a completely edible natural rind. An artisan Manchego cheese with Designation of Origin that has exceptional organoleptic qualities, in which the natural ferments are preserved, giving unique nuances of flavor, aroma, and texture in its category. All the sheep on the farm enjoy a state of semi-freedom where they alternate daily time in the field grazing, playing, sunbathing, or resting. The barns where they rest have been designed with the latest available technology focused on animal welfare (Animal Welfare™), and where they are milked or spend the night to shelter from the weather. Additionally, the cheese factory has a waste treatment plant that minimizes the ecological impact and footprint, thus contributing to becoming a 100% sustainable brand. We recommend pairing this semi-cured Adiano cheese with red wines from La Mancha since their robust notes perfectly complement the intensity of this aged artisan Manchego cheese.
