Recipe for Deer Jerky Cannelloni.

Ingredients for the cannelloni: deer jerky, 750g of tomato, 100g of arugula, chopped fresh dill, poppy seeds for the green garlic of pistachio, 250g of peeled pistachio, 1 clove of garlic, 400g of water, 10 cl of olive oil, 5 cl of apple cider vinegar, salt and black pepper

Preparation of the green garlic: Put all its ingredients in a bowl and beat at high speed, so that the oil emulsifies well. Season and let cool while preparing the rest.

Filling: Blanch the tomatoes, separate and discard the skin and seeds. Cut the tomato into concasse, add the chopped fresh dill and poppy seed. Mix everything well and finally add the arugula and season. Fill the slices of jerky and roll with the shape of the cannelloni. And finally for plating, we will put a dollop of green garlic on the plate and the cannelloni on top.
