The cheese Cabrales produced in Asturias by the cheese factory Rojo Prieto has the Designation of Origin which guarantees its high quality.
It is a blue cheese handmade with raw cow, sheep, and goat milk in different proportions, which is produced following traditional methods in the Principality of Asturias: specifically, the production area of Cabrales cheese includes the Cabrales Council and three neighboring villages of the Peñamellera Alta Council. Once made, it is aged in natural caves in the mountains for between two and four months. In these caves, the relative humidity is 90% and the temperature ranges between 8º and 12º C. All of this gives it a unique flavor and aroma.
These aging conditions promote the development of penicillium mold in the cheese, giving it blue-greenish spots and veins. All the milk used in the production comes exclusively from farms located in the production area and controlled by the Regulatory Council. With a creamy texture and intense, slightly spicy flavor, pair the Cabrales D.O. Rojo Prieto cheese with walnuts, figs, and a glass of Asturian cider to enjoy a delightful gastronomic experience.
