The D.O. manchego artisan aged sheep cheese is made exclusively with freshly milked milk from purebred Manchego sheep, which feed on the pastures of the same farm and what is collected on it.

Aged in its own mold, which gives it a unique flavor, and a completely edible natural rind.All the sheep on the farm enjoy a state of semi-freedom where they alternate daily time in the field grazing, playing, sunbathing, or resting. The barns where they rest have been designed with the latest available technology focused on animal welfare (Animal Welfair™), and where they are milked or spend the night to shelter from the weather.
In addition, the cheese factory has a waste treatment plant that minimizes the impact and ecological footprint, thus contributing to becoming a 100% sustainable brand.
