Fine fillets of smoked herring preserved in oil. These are the result of opening, cleaning, and deboning fresh herrings and wrapping them with dry brine (a mixture of sugar and salt), putting a weight on top of them to promote dehydration. After 24h, the brine is removed and they are placed in the oven at low temperature (around 37º). After about 12h, they are allowed to cool. They are preserved in oil, which gives them flavor and mellowness.
Product made with frozen raw material for more than 24h. At a temperature of -20ºC” for the prevention of Anisakis parasitosis.
