Properties of the summer truffle

The summer truffle is aromatic, but its flavor is milder than that of the white truffle (Tuber magnatum). In that sense, it is quite similar to the flavor of the black truffle (Tuber melanosporum). The interior of summer truffle is fleshy, has a roasted malt-like odor and its flavor can be compared to nuts such as hazelnuts or walnuts. It will bring a slightly sweet aroma to your dishes. They also have benefits thanks to their nutrients, which are practically the same as those of white truffles and black truffles. They are rich in minerals such as phosphorus, potassium and selenium; so they are healthy for the skeletal-muscular and nervous system. They do not have much sodium, so they contribute to maintain blood pressure. They also carry vitamin B, especially B2 and B3; necessary for the conversion of nutrients into energy

How to preserve Truffle and how to freeze Truffle

The truffle at room temperature runs the risk of oxidizing losing its properties so it is advisable to refrigerate.

  • Preferably consume within the next 7 days
  • Store between 4 and 6 degrees.
  • Keep it in the box we shipped it in as is.
  • Or wrap it in kitchen paper and put it in a non-plastic container without a lid. The truffle has a large water component and if it condenses moisture, it will spoil.
  • If it gets a little mold or a white spot, simply run it under cold running water and gently remove it with a toothbrush or similar. Dry it well with kitchen paper. It does not mean it has gone bad.
  • To take advantage of its aroma, you can preserve it while truffling foods such as eggs or butter.
  • Freezing it is not ideal, but it can be done. Wrap it first in kitchen paper and then in silver foil and into the freezer.

Differences between summer truffle and black truffle

Like the black truffle, it is dark on the outside. However, it has more pyramidal shapes on its surface. Inside, it is lighter in color, while the interior of the black truffle is purplish black with white veins. In addition, the summer truffle is more fleshy. Its flavor is milder than winter truffle, making it a slight flavor enhancer in dishes

The habitat in which both truffles grow is practically the same: Mediterranean forests. Although they require the same type of soil and substrate, the summer truffle is not as demanding and grows well in the heat. This makes it possible to find the truffle aestivum at a lower price.

Summer truffle recipes

You can integrate summer truffles in the same recipes as black truffles, although we recommend not mixing them with other stronger ingredients, because, having a milder flavor, they would lose their prominence

Thus, you can simply try them with toasted bread and extra virgin olive oil. It is also possible to add some laminated truffle to rice or pasta dishes. They also combine perfectly with artichokes, leeks, cardoons and borage.

Eggs

Truffled fried eggs

For a more intense aroma, you can place the eggs, without breaking them, in a closed container with a fresh summer truffle. Store them in the refrigerator 48 hours before consuming them. The eggshell is slightly porous, so it will absorb the aroma of the truffle.

Prepare the eggs in the refrigerator for 48 hours before eating them

Prepare the fried eggs as usual, but place them on a hot plate once fried and slice the truffle over the eggs. You will see that the truffle will change texture and will impregnate the eggs.

Cheese with truffle

The other types of truffle can be used with almost any cheese. However, summer truffle is not. Opt for a mild one, such as Brie or goat cheese

Cut the cheese into thick slices and place grated truffle between two slices, as if you were making sandwiches. Dip them in beaten egg and then in breadcrumbs. Fry them in very hot oil and then put them on absorbent paper to remove the excess

Veal soup with summer truffle

We recommend you to buy the carpaccio meat already ready, so it will be safer. Put 300 grams of carpaccio and add juice of half a lemon, oil, salt, pepper and chopped garlic. Let it macerate for 24 hours. Serve with 50 grams of cured Patamulo sheep cheese (or a similar one, such as Grana Padano) and 50 grams of grated truffle. You can decorate with about 50 grams of sprouted onion sprouts.

Spaghetti with summer truffle

Use 100 g of spaghetti and 5 g of truffle per person. Cook the spaghetti al dente and add the truffle, grated Parmesan cheese, nutmeg, a trickle of extra virgin olive oil, salt and pepper to taste.

Tallarini with truffle cream

Use 400 ml of cream and 5 grams of truffle for every 250 grams of tagliatelle. While cooking the pasta, heat the cream with salt until it boils. Then, add the grated truffle and keep it warm until you serve it with the pasta.

As you can see, cooking with summer truffle is very easy. I'm sure you will soon invent more recipes with it and you will see that your pasta sauces and risottos will not be the same. Enjoy this delicacy!
