Corn belongs to the grass family. Its leaves form a long sheath wrapped around the stalk from which two or three cobs are born and in each cob the grains develop
There are six different types of corn:
- Toothed: it is grown in the U.S.A. It takes on the shape of a tooth when the upper part of the kernel is dried
- Hard: the kernels are hard and consistent and the cobs are long and thin
- Soft or floury: it is grown in the southern U.S. and Mexico, and stands out because the kernels are soft even when fully ripe.
- Sweet: the most widely consumed in the U.S.A. in canned form or directly from the cob
- Burst: small and very hard kernels, they burst when they transform the water inside into steam and become popped kernels or popcorn.
- Sheathed: each kernel is enclosed in a small husk of its own, in addition to those covering the cob.
