The Petit Basque crémier is a cheese made from pasteurized sheep's milk weighing approximately 600 g with 45% fat on finished product.
This Basque creamer sheep cheese is part of the uncooked pressed cheese family. Under its hard rind is revealed a soft texture and a supple, melting paste. This beautiful streaky rind, with its light tones approaching beige, brown and orange, comes directly from its manufacturing process. Its name "P'tit Basque" comes from the legend that the son of a Basque shepherd had the idea to make it in a small wicker basket. The P'tit Basque is matured after 70 days of maturing under very strict conditions.
A cheese with a balanced and typical flavor, the Petit Basque melts in the mouth with salty tones.
Fine and delicate, this Basque ewe's milk cheese will go perfectly with a touch of black cherry or fig jam. Accompanied by country ham or spiced up with herbs or even Espelette pepper, P'tit Basque will be a sensation in cold starters, spreads or sandwiches. Its sweet and fragrant flavors also make it delicious added in dashes to hot dishes such as savory pies or pan-fried Mediterranean vegetables.
